Hervey took over his father's farm and mills at 17, managing very successfully until he sold out in 1823, He then engaged in the manufacture of woollen cloth with Aaron Tufts and others. He was secretary and bookkeeper of the company. He later withdrew from his position and opened a general store. The store was destroyed by fire on two occasions and he erected another and then sold out. For several years he tried hotel keeping in East Webster but, not prospering, returned to Dudley and settled on his wife's father's estate and followed farming.

About 1847 he removed to Worcester where one of his sons had settled, living there nearly 20 years. He then went to West Boyston on a small estate which he rented and occupied with his son Josiah.

He was a member of the Congregational Church all his adult life.
He was the father of Hezekiah Conant, the great thread man of Pawtucket.
